This recipe couldn&#8217;t be simpler! All you need to do is buy the ingredients at the market. You&#8217;ll need garlic, anchovies, capers and plenty of olive oil. Just blend everything together and your anchovy paste is ready!    <\/p><\/div><\/div><h3>The south and its terroir.<\/h3><p>Our markets are full of <strong>typical Provencal products<\/strong>, so you&#8217;re in for a treat! Take the opportunity to try out some of <strong>our local<\/strong> recipes. Stroll through the <strong>market stalls<\/strong> and pick up all the good things <strong>Provence<\/strong> has to offer. Black or green olives, spices and herbs, olive oils and much more will accompany you for your <strong>typically southern recipes<\/strong>.   <\/p><h2>Hy\u00e8res gastronomy.<\/h2><p><strong>Artichoke \u00e0 la barigoule<\/strong> is an <strong>old Hy\u00e8res recipe<\/strong>, named after the mushroom that made up the recipe. The recipe has since evolved, but the name remains the same. Instead, artichokes are cooked with herbes de Provence, bacon and garlic. Perfect for a family meal.   <\/p><div class=\"columns\"><div class=\"columns__item\"><h2>Sweet speciality.<\/h2><p>Do you think that southern specialities are only savoury? No, there are sweet ones too. <strong>White nougat<\/strong> is one of them, to the delight of young and old alike. Initially, this dessert was only available at Christmas time.
