Local gastronomy
Summer is here, and the market stalls are bursting with color. Provence’s produce is not just a vacation souvenir, it’s also part of the local gastronomy. Do you know the specialties of the south?

Fish specialty
The south is best known for its fish specialties.
In Hyères, you’ll be able to enjoy capon– not with poultry, but with fish! This is the name of a rock fish that is very well known here. You can cook it in a variety of ways. The best known is bouillabaisse, a famous fish soup. More simply, roast it in the oven with vegetables. Success guaranteed!
Have you ever tried anchoïade?
It’s a typically Provençal savory specialty from the sea. A classic in the cuisine of the South of France. Making this recipe isn’t at all complicated – on the contrary! Simply mix anchovies with garlic and capers, and toss with plenty of olive oil. You’ll easily find all these products on our markets in Hyeres.
Other local products
At the markets, you’ll be able to buy many of the Provencal products that are part of typical Hyerois recipes. Let yourself be seduced by black or green olives bursting with oil, the scent of spices, bouquets of thyme and rosemary and many other Provencal products.
Typical recipe from Hyères
Let yourself be tempted byartichokes à la barigoule. This is an ancient recipe, typical of Hyères. Its name comes from the mushroom that accompanied the recipe. Although the recipe has evolved, it has kept its name. Today, artichokes are served with herbes de Provence, garlic and bacon.
Desserts
One of the best-known desserts from the south of France is white nougat. This dessert was originally eaten at Christmas time. Today, it’s available all year round in regional grocery stores and Provencal markets.
