Southern fish specialties

Provence is synonymous with seafood. They can be cooked in a variety of ways. A wide range of fish can be caught in the Mediterranean. Some species are protected and must be fished in compliance with regulations.

Sea fishing can be divided into two categories:

Recreational fishing is non-commercial fishing. The products caught are intended for consumption by the angler and his family. Recreational fishing is subject to certain rules: undersized fish and crustaceans must be returned to the water to avoid the extinction of species. Anglers must also use equipment authorized for this type of fishing and respect regulated fishing zones.

Here are a few Provençal fish specialities:

Fish soup

It’s an essential part of Provencal cuisine. It is cooked with rock fish. To give it a little extra flavor, it’s accompanied by garlicbread croutons spread with rouille. This soup is also used in the famous bouillabaisse, served with fish and potatoes.

Bouillabaisse

This specialty comes to us from Marseille. This culinary tradition can be adapted to suit all tastes. Shellfish and crustaceans can be added to the whole fish already present in the recipe. You’re in for a treat.

The best-known fish

For starters, there’s sea bream. This is the tastiest and most popular Mediterranean fish. It’s very popular in Provence and can be cooked in a variety of ways, depending on your taste. Next, you’ll find recipes for cod in Provencal dishes. Fried or baked, in sauce or plain, this tasty fish will delight young and old alike for a good family meal.
