Hyères Gastronomy

The capon

In most of France, you’ll be served rooster if you ask for it. In Hyères, if you order capon, they’ll bring you fresh Mediterranean fish. This rock fish is used in the traditional bouillabaisse. To fully appreciate its flavor, you can bake it in the oven, serve it with vegetables and enjoy it very fresh.

White nougat

Looking for a sweet break between two meals? Omnipresent during the Christmas season, nougat appeals to gourmets of all ages. So popular has this dessert become that the people of Provence have decided to honor it all year round.

Anchoïade

A staple of Provencal cuisine, anchoïade is made with anchovies, capers, garlic and olive oil. Similar to tapenade and Nice pissalat, anchoïade is obtained by grinding the ingredients in a mortar. Serve on its own or on a slice of bread as an aperitif, usually cold (it’s also great hot!). Add a hard-boiled egg and raw vegetables to liven up your plate or bowl. A little tip: your anchovy paste will be even more appealing if you enjoy it on the private terrace of your fully-equipped mobile home, facing the wooded estate.

Artichokes à la barigoule

This old Provencal recipe has evolved considerably. Artichoke, bacon, garlic and Provençal herbs are the main ingredients of this specialty that will amaze your guests and your palate.

The markets

Traditional and summer markets are the best places to buy local produce. Several markets are held in Hyères:

  • Tuesday and Saturday mornings on avenue Gambetta (year-round)
  • Thursday mornings in Place Clémenceau (May to September)
  • Sunday mornings at the port (Robin parking lot, year-round)
