How about making your own anchovy paste?
Made with seafood, this savory southern specialty has become a classic of Provencal cuisine. This recipe couldn’t be simpler! All you need to do is buy the ingredients at the market. You’ll need garlic, anchovies, capers and plenty of olive oil. Just blend everything together and your anchovy paste is ready!

Our markets are full of typical Provencal products, so you’re in for a treat! Take the opportunity to try out some of our local recipes. Stroll through the market stalls and pick up all the good things Provence has to offer. Black or green olives, spices and herbs, olive oils and much more will accompany you for your typically southern recipes.
Hyères gastronomy.
Artichoke à la barigoule is an old Hyères recipe, named after the mushroom that made up the recipe. The recipe has since evolved, but the name remains the same. Instead, artichokes are cooked with herbes de Provence, bacon and garlic. Perfect for a family meal.
Sweet speciality.
Do you think that southern specialities are only savoury? No, there are sweet ones too. White nougat is one of them, to the delight of young and old alike. Initially, this dessert was only available at Christmas time. But for some time now, this Provencal product has been available in all regional grocery stores and markets, so you can enjoy it all year round.
